Freezer Friendly Orange Cupcakes with Chocolate Orange Icing

The bright flavor of orange infuses these moist little cupcakes as well as their rich chocolate icing.  Keep the frosted cupcakes in the freezer, then defrost at room temperature for about 15 minutes and enjoy.  This is a perfect treat to keep on hand for unexpected guests who drop by, small birthday treats for co-workers, or when the kids forget to tell you cupcakes are needed for tomorrow’s school party.

Freezer Friendly Pineapple Upsidedown Cake or Mini-Cakes

I’m not sure why you don’t see this classic retro recipe that much anymore because it is awesome!

This cake looks as impressive as it tastes with buttery caramel infused pineapple covering a moist delicate cake.  Yet it is easy to make and not at all time consuming since it requires no frosting — the cake is done when it comes out of the oven.

Freezer Friendly Mexican Chocolate and Chile Cupcakes with Dulce de Leche Icing

This recipe is based on one created by my friend Amanda Formaro of Amanda’s Cookin’ . They’ve been one of my favorite party desserts lately and everyone always raves about them.  Amanda’s version, also delicious, is more of a spice cake.
